Ingredients
- 2 pieces salmon fillets (skinless, boneless)
- 1 cup coconut milk
- 1 tablespoon curry powder
- 2 cups spinach (fresh, chopped)
- 1 medium onion (finely chopped)
- 2 cloves garlic (minced)
- 1 tablespoon olive oil
- to taste salt
- to taste pepper
Instructions
- Heat olive oil in a pan over medium heat.
- Add chopped onion and minced garlic, sauté until translucent.
- Stir in curry powder and cook for 1 minute.
- Add salmon fillets and cook for 3-4 minutes on each side until cooked through.
- Pour in coconut milk and add chopped spinach, simmer for 5 minutes.
- Season with salt and pepper to taste, serve warm.
