Ingredients
- 2 medium sweet potato
- 1 large egg (beaten)
- 1/2 cup whole wheat flour
- 2 tablespoons olive oil (for greasing)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and dice the sweet potatoes and boil until tender, about 15 minutes.
- Drain and mash the sweet potatoes in a bowl.
- Add the beaten egg, whole wheat flour, salt, pepper, and garlic powder to the mashed sweet potatoes and mix well.
- Shape the mixture into small puffs or balls and place them on a greased baking sheet.
- Bake for 15-20 minutes or until golden brown, turning halfway through. Allow to cool slightly before serving.
