Ingredients

  • 2 medium sweet potato
  • 1 large egg (beaten)
  • 1/2 cup whole wheat flour
  • 2 tablespoons olive oil (for greasing)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice the sweet potatoes and boil until tender, about 15 minutes.
  3. Drain and mash the sweet potatoes in a bowl.
  4. Add the beaten egg, whole wheat flour, salt, pepper, and garlic powder to the mashed sweet potatoes and mix well.
  5. Shape the mixture into small puffs or balls and place them on a greased baking sheet.
  6. Bake for 15-20 minutes or until golden brown, turning halfway through. Allow to cool slightly before serving.
