Ingredients

  • 1 lb chicken breast (cut into bite-sized pieces)
  • 1 cup whole wheat breadcrumbs (for coating)
  • 1 large egg
  • 1/2 cup finely chopped broccoli (steamed)
  • 1/2 cup grated carrot
  • 1 tablespoon olive oil (for drizzling)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix chicken pieces with garlic powder, paprika, salt, and pepper.
  3. In another bowl, whisk the egg and add the finely chopped broccoli and grated carrot.
  4. Dip each chicken piece into the egg mixture, then coat with whole wheat breadcrumbs.
  5. Place the nuggets on a baking tray lined with parchment paper, drizzle with olive oil.
  6. Bake for 15-20 minutes until golden brown and cooked through.
