Ingredients

  • 2 cups whole wheat pasta
  • 1/2 medium red bell pepper
  • 1/2 medium yellow bell pepper
  • 1 medium zucchini
  • 1 medium carrot
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 2 tablespoons parmesan cheese (grated)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Cook whole wheat pasta according to package instructions until al dente.
  2. While pasta is cooking, chop the red and yellow bell peppers, zucchini, and carrot into small pieces.
  3. In a large skillet, heat olive oil over medium heat and add minced garlic, cooking until fragrant.
  4. Add chopped vegetables to the skillet and sauté for about 5-7 minutes until tender.
  5. Once pasta is cooked, drain and add to the skillet with vegetables.
  6. Toss everything together, season with salt and black pepper, and sprinkle with parmesan cheese before serving.
