Ingredients
- 2 cups whole wheat pasta
- 1/2 medium red bell pepper
- 1/2 medium yellow bell pepper
- 1 medium zucchini
- 1 medium carrot
- 1 tablespoon olive oil
- 1 clove garlic (minced)
- 2 tablespoons parmesan cheese (grated)
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Cook whole wheat pasta according to package instructions until al dente.
- While pasta is cooking, chop the red and yellow bell peppers, zucchini, and carrot into small pieces.
- In a large skillet, heat olive oil over medium heat and add minced garlic, cooking until fragrant.
- Add chopped vegetables to the skillet and sauté for about 5-7 minutes until tender.
- Once pasta is cooked, drain and add to the skillet with vegetables.
- Toss everything together, season with salt and black pepper, and sprinkle with parmesan cheese before serving.
