Ingredients

  • 1 cup rolled oats (blended to flour)
  • 1 cup milk (or non-dairy alternative)
  • 2 tablespoons peanut butter
  • 1 large egg
  • 1 teaspoon baking powder

Instructions

  1. Blend rolled oats until they reach a flour-like consistency.
  2. In a bowl, mix oat flour, baking powder, and set aside.
  3. In another bowl, whisk together milk, peanut butter, egg, and vanilla extract.
  4. Combine wet and dry ingredients until just mixed.
  5. Heat a non-stick skillet over medium heat and pour batter to form pancakes.
  6. Cook until bubbles form, then flip and cook the other side until golden brown.
