Ingredients
- 2 cups baby spinach (fresh)
- 2 medium banana (ripe)
- 2 large eggs (room temperature)
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/3 cup honey (or maple syrup)
- 1/2 cup milk (dairy or plant-based)
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a blender, combine spinach, bananas, eggs, honey, milk, and vanilla extract. Blend until smooth.
- In a large bowl, whisk together whole wheat flour, baking powder, and baking soda.
- Pour the spinach mixture into the dry ingredients and stir until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
