Ingredients

  • 2 cups baby spinach (fresh)
  • 2 medium banana (ripe)
  • 2 large eggs (room temperature)
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup honey (or maple syrup)
  • 1/2 cup milk (dairy or plant-based)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a blender, combine spinach, bananas, eggs, honey, milk, and vanilla extract. Blend until smooth.
  3. In a large bowl, whisk together whole wheat flour, baking powder, and baking soda.
  4. Pour the spinach mixture into the dry ingredients and stir until just combined.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
  6. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  7. Let muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
