Ingredients

  • 1 cup cooked chicken breast (shredded)
  • 2 cups cabbage (finely chopped)
  • 1 medium carrot (grated)
  • 1/4 cup Greek yogurt (as a dressing)
  • 4 slices whole grain bread (for sandwiches)
  • 1 tablespoon apple cider vinegar (for dressing)
  • 1 teaspoon honey (optional for sweetness)
  • to taste salt
  • to taste pepper

Instructions

  1. In a bowl, combine shredded chicken, chopped cabbage, grated carrot, Greek yogurt, apple cider vinegar, honey, salt, and pepper.
  2. Mix all ingredients until well combined to make the coleslaw.
  3. Toast the whole grain bread lightly if desired.
  4. Spread the coleslaw mixture onto two slices of bread and top with the other slices to form sandwiches.
  5. Cut in half and serve immediately.
