Ingredients

  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1 cup grated carrots
  • 1 cup grated apple
  • 1/3 cup honey
  • 1 large egg
  • 1/2 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup milk

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the flour, baking powder, baking soda, and cinnamon.
  3. In another bowl, combine the grated carrots, grated apple, honey, egg, applesauce, vanilla extract, and milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Spoon the batter into the muffin tin, filling each cup about 2/3 full.
  6. Bake for 15-20 minutes or until a toothpick comes out clean.
  7. Let cool before serving.
