Ingredients
- 1 1/2 cups whole wheat flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 cup grated carrots
- 1 cup grated apple
- 1/3 cup honey
- 1 large egg
- 1/2 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1/2 cup milk
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the flour, baking powder, baking soda, and cinnamon.
- In another bowl, combine the grated carrots, grated apple, honey, egg, applesauce, vanilla extract, and milk.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Spoon the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 15-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
