Ingredients

  • 1 cup quinoa (uncooked)
  • 2 cups broccoli (cut into florets)
  • 1 cup mushrooms (sliced)
  • 2 cups vegetable broth (for cooking quinoa)
  • 2 tablespoons olive oil (for sautéing)
  • 2 tablespoons lemon juice (freshly squeezed)
  • to taste salt
  • to taste pepper

Instructions

  1. Rinse quinoa thoroughly and cook in vegetable broth according to package instructions.
  2. In a skillet, heat olive oil and sauté broccoli and mushrooms until tender, about 8 minutes.
  3. Mix the cooked quinoa with sautéed vegetables, add lemon juice, salt, and pepper before serving.
