Ingredients

  • 1 medium brinjal (eggplant) (peeled and diced)
  • 1/2 cup red lentils (rinsed)
  • 2 cups water
  • 1 tablespoon olive oil
  • 1 clove garlic (minced)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. In a pot, combine water and lentils. Bring to a boil and simmer for 10 minutes.
  2. Add diced brinjal and cook until both are tender, about 10 minutes more.
  3. Drain any excess water and mash the lentils and brinjal together.
  4. Stir in olive oil, minced garlic, salt, and pepper until well combined.
