Ingredients
- 1 cup whole wheat flour
- 1 tablespoon baking powder
- 1 cup milk (can use PediaSure)
- 1 large egg
- 1/2 cup blueberries (fresh or frozen)
- 2 tablespoons maple syrup (optional for serving)
- as needed cooking spray (for frying)
Instructions
- In a bowl, mix whole wheat flour and baking powder.
- In another bowl, whisk together milk and egg until combined.
- Combine wet and dry ingredients, mixing until just combined, then fold in blueberries.
- Heat a non-stick skillet over medium heat and spray with cooking spray.
- Pour batter onto skillet to form pancakes (about 1/4 cup each), cooking until bubbles form on the surface.
- Flip and cook until golden brown on both sides.
- Serve pancakes with a drizzle of maple syrup if desired.
