Ingredients
- 1 cup cooked brown rice
- 1/2 cup diced chicken breast (cooked)
- 1 large egg (beaten)
- 1/4 cup peas
- 1/4 cup diced carrots
- 1 tablespoon soy sauce (low sodium preferred)
- 1 teaspoon olive oil
- 1 tablespoon chopped green onions
Instructions
- Heat olive oil in a pan over medium heat.
- Add the diced chicken and cook until lightly browned.
- Add the diced carrots and peas, cooking until tender.
- Push the chicken and vegetables to one side of the pan, pour in the beaten egg, and scramble it.
- Add the cooked rice and soy sauce, stirring to combine everything evenly.
- Cook for another 2-3 minutes until heated through, then stir in green onions before serving.
