Ingredients

  • 4 eggs (hard-boiled)
  • 1 medium onion (finely chopped)
  • 1 medium tomato (chopped)
  • 1/2 cup coconut milk
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 tablespoon olive oil
  • to taste salt
  • for garnish fresh coriander

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chopped onions and sauté until golden brown.
  3. Add chopped tomatoes, turmeric, cumin, and coriander powders. Cook until tomatoes soften.
  4. Pour in coconut milk and stir well.
  5. Add hard-boiled eggs, cut in half, and gently mix into the curry.
  6. Simmer for 5 minutes, allowing flavors to meld.
  7. Garnish with fresh coriander before serving.
