Ingredients
- 4 eggs (hard-boiled)
- 1 medium onion (finely chopped)
- 1 medium tomato (chopped)
- 1/2 cup coconut milk
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 tablespoon olive oil

Instructions
- Heat olive oil in a pan over medium heat.
- Add chopped onions and sauté until golden brown.
- Add chopped tomatoes, turmeric, cumin, and coriander powders. Cook until tomatoes soften.
- Pour in coconut milk and stir well.
- Add hard-boiled eggs, cut in half, and gently mix into the curry.
- Simmer for 5 minutes, allowing flavors to meld.
- Garnish with fresh coriander before serving.
