Ingredients
- 4 medium whole wheat tortillas
- 2 cups baby spinach (fresh)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 1 medium avocado (for serving)
Instructions
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
- Add spinach on top of the cheese and then fold the tortilla over.
- Cook for 2-3 minutes until golden brown, then flip and cook for another 2-3 minutes until the cheese is melted.
- Remove from skillet and cut into wedges. Repeat with remaining tortillas.
- Serve with sliced avocado.
