Ingredients

  • 2 pieces salmon fillets (skinless, boneless)
  • 1 cup coconut milk
  • 1 tablespoon curry powder
  • 2 cups spinach (fresh, chopped)
  • 1 medium onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Stir in curry powder and cook for 1 minute.
  4. Add salmon fillets and cook for 3-4 minutes on each side until cooked through.
  5. Pour in coconut milk and add chopped spinach, simmer for 5 minutes.
  6. Season with salt and pepper to taste, serve warm.
