Ingredients

  • 1 cup rolled oats (can use gluten-free oats if needed)
  • 1 large banana (ripe)
  • 1 large egg
  • 1/2 cup milk (or any plant-based milk)
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • as needed cooking spray (for frying)

Instructions

  1. Blend rolled oats in a blender until a flour-like consistency is achieved.
  2. In a bowl, mash banana and mix in egg, milk, baking powder, and cinnamon.
  3. Combine the oat flour with the banana mixture until just combined.
  4. Heat a non-stick skillet over medium heat and spray with cooking spray.
  5. Pour batter (about 1/4 cup) onto the skillet, cooking until bubbles form, then flip and cook until golden brown.
