Ingredients

  • 1 medium whole wheat tortilla
  • 1/4 cup button mushrooms (sliced)
  • 1/4 cup bell pepper (sliced)
  • 1/4 cup cheddar cheese (shredded)
  • 1 teaspoon olive oil

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add sliced mushrooms and bell pepper, sauté for 3-5 minutes until soft.
  3. Place one tortilla in the pan, sprinkle cheese on one half, add sautéed veggies, and fold the tortilla.
  4. Cook for another 3-4 minutes until cheese melts and tortilla is golden brown.
  5. Cut into small wedges and serve warm.
