Ingredients

  • 1 cup cooked brown rice
  • 1/2 cup diced chicken breast (cooked)
  • 1 large egg (beaten)
  • 1/4 cup peas
  • 1/4 cup diced carrots
  • 1 tablespoon soy sauce (low sodium preferred)
  • 1 teaspoon olive oil
  • 1 tablespoon chopped green onions

Instructions

  1. Heat olive oil in a pan over medium heat.
  2. Add the diced chicken and cook until lightly browned.
  3. Add the diced carrots and peas, cooking until tender.
  4. Push the chicken and vegetables to one side of the pan, pour in the beaten egg, and scramble it.
  5. Add the cooked rice and soy sauce, stirring to combine everything evenly.
  6. Cook for another 2-3 minutes until heated through, then stir in green onions before serving.
