Ingredients

  • 1/2 cup soya chunks (soaked and drained)
  • 2 cups mixed vegetables (carrots, peas, and corn)
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion (chopped)
  • 1/2 teaspoon black pepper (to taste)

Instructions

  1. Heat olive oil in a pot and sauté onions until translucent.
  2. Add mixed vegetables and sauté for 5 minutes.
  3. Pour in vegetable broth and bring to a boil.
  4. Add soya chunks, reduce heat, and simmer for 20 minutes.
  5. Season with black pepper before serving.
