Ingredients
- 1 medium whole wheat tortilla
- 1/4 cup button mushrooms (sliced)
- 1/4 cup bell pepper (sliced)
- 1/4 cup cheddar cheese (shredded)
- 1 teaspoon olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Add sliced mushrooms and bell pepper, sauté for 3-5 minutes until soft.
- Place one tortilla in the pan, sprinkle cheese on one half, add sautéed veggies, and fold the tortilla.
- Cook for another 3-4 minutes until cheese melts and tortilla is golden brown.
- Cut into small wedges and serve warm.
