Ingredients

  • 1 large boiled eggs
  • 1/2 cup cooked rice
  • 1/4 cup coconut milk
  • 1/4 teaspoon turmeric powder
  • a pinch salt
  • 1 teaspoon oil
  • 1 tablespoon finely chopped coriander leaves

Instructions

  1. Heat oil in a pan, add turmeric powder and salt, and stir.
  2. Add coconut milk and bring to a gentle boil.
  3. Add the boiled eggs and simmer for a few minutes.
  4. Serve the curry over cooked rice and garnish with coriander leaves.
