Ingredients
- 1 large boiled eggs
- 1/2 cup cooked rice
- 1/4 cup coconut milk
- 1/4 teaspoon turmeric powder
- a pinch salt
- 1 teaspoon oil
- 1 tablespoon finely chopped coriander leaves
Instructions
- Heat oil in a pan, add turmeric powder and salt, and stir.
- Add coconut milk and bring to a gentle boil.
- Add the boiled eggs and simmer for a few minutes.
- Serve the curry over cooked rice and garnish with coriander leaves.
