Ingredients
- 1 can (14 oz) canned tomatoes (diced)
- 1 medium carrot (diced)
- 1/2 medium onion (chopped)
- 2 cups vegetable broth
- 1 tablespoon olive oil (for sautéing)

- 1/4 teaspoon pepper (to taste)
Instructions
- In a pot, heat olive oil over medium heat.
- Add chopped onion and carrot, and sauté until soft.
- Add canned tomatoes and vegetable broth, and bring to a boil.
- Reduce heat and simmer for 15 minutes. Season with salt and pepper.
