Spinach and Cheese Quesadillas

Ingredients

  • 4 medium whole wheat tortillas
  • 2 cups baby spinach (fresh)
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • 1 medium avocado (for serving)

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  3. Add spinach on top of the cheese and then fold the tortilla over.
  4. Cook for 2-3 minutes until golden brown, then flip and cook for another 2-3 minutes until the cheese is melted.
  5. Remove from skillet and cut into wedges. Repeat with remaining tortillas.
  6. Serve with sliced avocado.
