Ingredients

  • 1 can (14 oz) canned tomatoes (diced)
  • 1 medium carrot (diced)
  • 1/2 medium onion (chopped)
  • 2 cups vegetable broth
  • 1 tablespoon olive oil (for sautéing)
  • 1/4 teaspoon salt (to taste)
  • 1/4 teaspoon pepper (to taste)

Instructions

  1. In a pot, heat olive oil over medium heat.
  2. Add chopped onion and carrot, and sauté until soft.
  3. Add canned tomatoes and vegetable broth, and bring to a boil.
  4. Reduce heat and simmer for 15 minutes. Season with salt and pepper.
